- Sunchokes - 400 grams
- Coconut milk - 100 ml

- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the sunchokes thoroughly to remove any dirt.
- Cut the sunchokes into halves or quarters for even cooking.
- Place the sunchokes on a baking sheet, drizzle with 1 tablespoon of ghee, and sprinkle with salt and black pepper.
- Roast in the preheated oven for 25-30 minutes, or until the sunchokes are fork-tender and golden brown.
- Remove from the oven and let cool slightly before transferring to a mixing bowl.
- Add the coconut milk, turmeric powder, cumin powder, lemon juice, and chopped cilantro to the bowl with the roasted sunchokes.
