Ingredients

  • Sunchokes - 300 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Curry powder - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Coconut oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Peel and grate the sunchokes using a box grater or food processor.
  2. In a bowl, combine the grated sunchokes, chopped red onion, minced garlic, curry powder, turmeric, salt, and black pepper. Mix thoroughly.
  3. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  4. Once the oil is hot, add half of the sunchoke mixture to the skillet and press down with a spatula to form a patty.
  5. Cook for about 5-7 minutes until golden brown, then flip carefully and cook for another 5-7 minutes on the other side.
  6. Remove the first patty and repeat with the remaining sunchoke mixture, adding the remaining tablespoon of coconut oil if needed.
  7. Once both patties are cooked, garnish with fresh cilantro before serving.
