- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon, for drizzling
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix almond flour, melted coconut oil, ground flaxseed, water, salt, and spices to form a dough.
- Press the dough onto a parchment-lined baking sheet to create a pizza crust, about 1/2 cm thick.
- Roast the sunchokes in the preheated oven for 15 minutes until tender, then remove and set aside.
- Sauté minced garlic in olive oil over medium heat for 1 minute, then add chopped spinach and cook until wilted.
- Spread the sautéed spinach evenly over the pizza crust, followed by the roasted sunchokes.
- Return the pizza to the oven and bake for an additional 15-20 minutes until the crust is golden brown.
- Remove from oven and drizzle with olive oil, then garnish with fresh cilantro before slicing and serving.
