- Round gourd (tinda) - 2 medium-sized
- Cauliflower - 100 grams, grated
- Carrot - 50 grams, grated
- Onion - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon (adjust to taste)
- Salt - to taste
- Coconut oil - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Wash the gourds thoroughly and cut off the tops to create a hollow space for stuffing.
- Using a spoon, carefully scoop out the insides of the gourds, leaving the outer shell intact. Finely chop the scooped-out flesh and set aside.
- In a pan, heat coconut oil over medium heat and add chopped onions, ginger, and garlic. Sauté until the onions become translucent.
- Add the grated cauliflower, grated carrot, and chopped gourd flesh to the pan. Cook for about 5 minutes until the vegetables are tender.
- Stir in coriander powder, cumin powder, turmeric powder, chili powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat.
- Stuff the hollowed gourds with the vegetable mixture, packing it tightly.
- Place the stuffed gourds in a steamer and steam for about 10-12 minutes until they are tender.
- Remove from the steamer, garnish with fresh coriander leaves, and serve hot.
