Ingredients

  • Round gourd (tinda) - 2 medium-sized
  • Cauliflower - 100 grams, grated
  • Carrot - 50 grams, grated
  • Onion - 1 small, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Coconut oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Wash the gourds thoroughly and cut off the tops to create a hollow space for stuffing.
  2. Using a spoon, carefully scoop out the insides of the gourds, leaving the outer shell intact. Finely chop the scooped-out flesh and set aside.
  3. In a pan, heat coconut oil over medium heat and add chopped onions, ginger, and garlic. Sauté until the onions become translucent.
  4. Add the grated cauliflower, grated carrot, and chopped gourd flesh to the pan. Cook for about 5 minutes until the vegetables are tender.
  5. Stir in coriander powder, cumin powder, turmeric powder, chili powder, and salt. Mix well and cook for another 2-3 minutes. Remove from heat.
  6. Stuff the hollowed gourds with the vegetable mixture, packing it tightly.
  7. Place the stuffed gourds in a steamer and steam for about 10-12 minutes until they are tender.
  8. Remove from the steamer, garnish with fresh coriander leaves, and serve hot.
