Ingredients

  • 2 large capsicums (bell peppers) - any color
  • 100 grams paneer, crumbled
  • 1/2 cup cooked quinoa
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped tomatoes
  • 2 tablespoons green peas (fresh or frozen)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 2 tablespoons chopped fresh coriander leaves
  • Salt to taste
  • 2 tablespoons oil for grilling
  • Lemon wedges for serving

Steps

  1. Preheat your grill or BBQ to medium heat.
  2. Wash the capsicums, cut the tops off, and remove the seeds carefully to create hollow shells.
  3. In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onions and sauté until translucent.
  4. Add the ginger-garlic paste and sauté for another minute until fragrant.
  5. Stir in the chopped tomatoes and cook until they soften, about 3-4 minutes.
  6. Add the green peas, cumin powder, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for 2 minutes.
  7. Remove the pan from heat and add the crumbled paneer, cooked quinoa, and chopped coriander leaves. Mix thoroughly to combine all ingredients.
  8. Stuff each capsicum with the prepared filling and press down gently to pack it in.
  9. Brush the outside of the stuffed capsicums with the remaining oil.
  10. Place the capsicums on the grill and cook for about 15-20 minutes, turning occasionally, until they are charred and tender.
  11. Serve hot with lemon wedges on the side.
