Ingredients

  • Green lentils - 100 grams
  • Water - 1.5 liters
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Carrot - 1 medium, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Chaat masala - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and soak them in water for 8 hours or overnight.
  2. After soaking, drain the lentils and place them in a sprouting jar or a bowl covered with a damp cloth. Let them sprout for 24 hours, rinsing them every 8 hours.
  3. Once sprouted, rinse the lentils again and set them aside.
  4. In a mixing bowl, combine the diced cucumber, tomato, finely chopped red onion, and grated carrot.
  5. Add the sprouted lentils to the bowl with the vegetables.
  6. In a small bowl, whisk together lemon juice, olive oil, cumin powder, chaat masala, salt, and black pepper.
  7. Pour the dressing over the salad and toss gently to combine all the ingredients.
  8. Garnish with chopped coriander leaves and serve fresh.
