- Green lentils - 100 grams
- Water - 1.5 liters
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Carrot - 1 medium, grated
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Chaat masala - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the green lentils under cold water and soak them in water for 8 hours or overnight.
- After soaking, drain the lentils and place them in a sprouting jar or a bowl covered with a damp cloth. Let them sprout for 24 hours, rinsing them every 8 hours.
- Once sprouted, rinse the lentils again and set them aside.
- In a mixing bowl, combine the diced cucumber, tomato, finely chopped red onion, and grated carrot.
- Add the sprouted lentils to the bowl with the vegetables.
- In a small bowl, whisk together lemon juice, olive oil, cumin powder, chaat masala, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine all the ingredients.
- Garnish with chopped coriander leaves and serve fresh.
