Ingredients
- Fresh spinach - 200 grams
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coconut milk - 200 ml
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Fresh coriander leaves - for garnish
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add turmeric powder and stir well to combine.
- Add fresh spinach to the pot and sauté for 2-3 minutes until wilted.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
- Add coconut milk and simmer for another 5 minutes.
- Blend the soup using an immersion blender until smooth. You can also use a regular blender if preferred.
- Season with salt, black pepper, and lemon juice. Stir well.
- Serve hot, garnished with fresh coriander leaves.
