Ingredients

  • Fresh spinach - 200 grams
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Fresh coriander leaves - for garnish

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Add turmeric powder and stir well to combine.
  5. Add fresh spinach to the pot and sauté for 2-3 minutes until wilted.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  7. Add coconut milk and simmer for another 5 minutes.
  8. Blend the soup using an immersion blender until smooth. You can also use a regular blender if preferred.
  9. Season with salt, black pepper, and lemon juice. Stir well.
  10. Serve hot, garnished with fresh coriander leaves.
