- Fresh spinach - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until translucent.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes.
- Add coriander powder, turmeric powder, and salt. Mix well and cook for 1 minute to toast the spices.
- Add the fresh spinach and sauté until wilted, about 3-4 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Blend the mixture using an immersion blender until smooth. Alternatively, transfer to a blender and blend in batches.
- Stir in the coconut milk and bring the soup back to a gentle simmer.
- Season with black pepper and lemon juice. Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh cilantro.
