Ingredients

  • Fresh spinach - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onion and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes.
  4. Add coriander powder, turmeric powder, and salt. Mix well and cook for 1 minute to toast the spices.
  5. Add the fresh spinach and sauté until wilted, about 3-4 minutes.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  7. Blend the mixture using an immersion blender until smooth. Alternatively, transfer to a blender and blend in batches.
  8. Stir in the coconut milk and bring the soup back to a gentle simmer.
  9. Season with black pepper and lemon juice. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh cilantro.
