Ingredients

  • Basmati rice - 1 cup
  • Fresh spinach - 200 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit (optional)
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Water - 2 cups
  • Oil - 1 tablespoon (coconut or vegetable)
  • Lemon juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the oil over medium heat and add the cumin seeds. Let them sizzle for a few seconds.
  3. Add the chopped onion to the pot and sauté until it becomes translucent, about 3-4 minutes.
  4. Stir in the minced garlic, grated ginger, and green chili (if using), and sauté for another 1-2 minutes until fragrant.
  5. Add the chopped spinach, turmeric powder, and salt to the pot, and cook until the spinach is wilted, about 2-3 minutes.
  6. Drain the soaked rice and add it to the pot, followed by 2 cups of water. Stir gently to combine all ingredients.
  7. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid.
  8. Cook for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  9. Fluff the rice with a fork, drizzle the lemon juice over it, and mix gently.
  10. Garnish with chopped cilantro before serving.
