Ingredients

  • Fresh spinach - 200 grams
  • Almond flour - 100 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1 small, finely chopped
  • Cumin seeds - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Heavy cream - 100 ml
  • Parmesan cheese - 30 grams, grated
  • Black pepper - to taste

Steps

  1. Blanch the spinach in boiling water for 2 minutes, then drain and immediately transfer it to an ice bath to stop cooking. Once cooled, squeeze out excess water and blend into a smooth puree.
  2. In a mixing bowl, combine almond flour, salt, and spinach puree. Add the egg and mix well until a dough forms. If the dough is too sticky, add a bit more almond flour.
  3. Knead the dough for a few minutes until smooth. Roll out the dough between two sheets of parchment paper to about 2 mm thickness. Cut into fettuccine strips.
  4. Heat olive oil in a pan over medium heat. Add cumin seeds, followed by minced garlic, ginger, and green chili. Sauté for 1-2 minutes until aromatic.
  5. Add the spinach fettuccine to the pan and toss gently for about 2-3 minutes to combine with the spices.
  6. Pour in heavy cream and stir in Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens slightly. Season with black pepper to taste.
  7. Serve hot, garnished with additional Parmesan cheese if desired.
