Ingredients
- Fresh spinach - 200 grams
- Almond flour - 100 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1 small, finely chopped
- Cumin seeds - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Heavy cream - 100 ml
- Parmesan cheese - 30 grams, grated
- Black pepper - to taste
Steps
- Blanch the spinach in boiling water for 2 minutes, then drain and immediately transfer it to an ice bath to stop cooking. Once cooled, squeeze out excess water and blend into a smooth puree.
- In a mixing bowl, combine almond flour, salt, and spinach puree. Add the egg and mix well until a dough forms. If the dough is too sticky, add a bit more almond flour.
- Knead the dough for a few minutes until smooth. Roll out the dough between two sheets of parchment paper to about 2 mm thickness. Cut into fettuccine strips.
- Heat olive oil in a pan over medium heat. Add cumin seeds, followed by minced garlic, ginger, and green chili. Sauté for 1-2 minutes until aromatic.
- Add the spinach fettuccine to the pan and toss gently for about 2-3 minutes to combine with the spices.
- Pour in heavy cream and stir in Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens slightly. Season with black pepper to taste.
- Serve hot, garnished with additional Parmesan cheese if desired.
