  • Red onion - 1 medium (cubed)
  • Cherry tomatoes - 1 cup

  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves (minced)
  • Ginger - 1 teaspoon (grated)
  • Chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Skewers (wooden or metal) - 4

Steps

  1. Soak wooden skewers in water for at least 15 minutes to prevent burning.
  2. In a bowl, combine peanut butter, soy sauce, lime juice, minced garlic, grated ginger, chili powder, turmeric, cumin, coriander, salt, and black pepper to create a marinade.
  3. Add the chopped vegetables (bell peppers, zucchini, mushrooms, red onion, and cherry tomatoes) into the marinade, ensuring they are well-coated. Let marinate for 15 minutes.
  4. Preheat the grill or BBQ to medium heat.
  5. Thread the marinated vegetables onto the soaked skewers, alternating the types for a colorful presentation.
  6. Brush the skewers lightly with olive oil to prevent sticking.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  8. Remove from the grill and serve hot with extra lime wedges and your favorite dipping sauce.
