Ingredients
- Antelope meat - 400 grams, finely ground
- Pork fat - 100 grams, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Red chili powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Black pepper - 1/2 teaspoon, freshly ground
- Salt - 1 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Natural sausage casings - 1 meter
Steps
- Soak the sausage casings in cold water for at least 30 minutes, then rinse them thoroughly.
- In a large mixing bowl, combine the ground antelope meat and chopped pork fat.
- Add the minced garlic, grated ginger, red chili powder, cumin powder, coriander powder, turmeric powder, black pepper, salt, chopped cilantro, and lemon juice to the meat mixture.
- Mix all the ingredients thoroughly with your hands until well combined.
- Stuff the sausage mixture into the rinsed casings, being careful not to overfill them. Twist sausages into 15 cm links and tie off the ends.
- Preheat the grill to medium-high heat. Grill the sausages for about 10-12 minutes, turning occasionally until they are cooked through and have a nice char.
- Remove from the grill and let rest for a few minutes before slicing and serving.
