  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Water - 2 tablespoons (if needed)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the coconut flour, almond flour, and salt.
  3. Add the melted coconut oil, honey, egg, and vanilla extract to the dry ingredients. Mix until a dough forms. If the dough is too crumbly, add water, 1 tablespoon at a time, until it holds together.
  4. Press the dough into a 9-inch pie dish evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  5. In another bowl, mix the pitted sour cherries with 1 tablespoon of honey. If the cherries are very tart, adjust the honey to taste.
  6. Pour the cherry mixture into the prepared crust, spreading it evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cherries are bubbling.
  8. Remove from the oven and let cool for at least 10 minutes before slicing. Serve warm or at room temperature.
