- Egg - 1 large

- Salt - 1/4 teaspoon
- Water - 2 tablespoons (if needed)
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the coconut flour, almond flour, and salt.
- Add the melted coconut oil, honey, egg, and vanilla extract to the dry ingredients. Mix until a dough forms. If the dough is too crumbly, add water, 1 tablespoon at a time, until it holds together.
- Press the dough into a 9-inch pie dish evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
- In another bowl, mix the pitted sour cherries with 1 tablespoon of honey. If the cherries are very tart, adjust the honey to taste.
- Pour the cherry mixture into the prepared crust, spreading it evenly.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cherries are bubbling.
- Remove from the oven and let cool for at least 10 minutes before slicing. Serve warm or at room temperature.
