Sooji Ladoo

Sooji Ladoo is a delightful Indian dessert made from semolina, sweetened with jaggery and flavored with cardamom. This vegan treat is perfect for celebrations or as a sweet snack.

Ingredients

  • Semolina (Sooji) - 1 cup
  • Jaggery - 1/2 cup, grated
  • Coconut oil - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (cashews and almonds) - 2 tablespoons
  • Water - 1/4 cup

Steps

  1. Heat a pan on medium flame and add coconut oil.
  2. Once the oil is melted, add the semolina and roast it for about 8-10 minutes, stirring continuously until it turns light golden brown and fragrant.
  3. In a separate bowl, dissolve the grated jaggery in 1/4 cup water and heat it gently until it melts completely.
  4. Pour the melted jaggery into the roasted semolina, stirring well to combine.
  5. Add the cardamom powder and chopped nuts to the mixture and mix thoroughly.
  6. Remove the mixture from heat and allow it to cool slightly until it is manageable to touch.
  7. Grease your palms with a little coconut oil and form the mixture into small round balls (ladoo).
  8. Let the ladoos cool completely before serving.
