Sooji Kachori

Ingredients

  • Semolina (Sooji) - 1 cup
  • Water - 1/2 cup
  • Oil - 2 tablespoons (for dough) + for deep frying
  • Potato - 1 medium, boiled and mashed
  • Green peas - 1/4 cup, boiled
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/4 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1/2 inch, grated
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped

Steps

  1. In a bowl, combine semolina, water, and 2 tablespoons of oil. Mix well to form a dough and let it rest for 15 minutes.
  2. In a pan, heat 1 tablespoon of oil and add cumin seeds. Once they splutter, add grated ginger and chopped green chili. Sauté for a minute.
  3. Add the boiled mashed potato and peas to the pan. Stir in coriander powder, garam masala, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and add chopped coriander leaves.
  4. Divide the dough into equal portions and roll each portion into a ball. Flatten each ball into a small disc.
  5. Place a spoonful of the potato-pea filling in the center of each disc. Fold the edges over the filling and seal it well to form a kachori.
  6. Heat oil in a deep frying pan over medium heat. Once hot, carefully slide in the kachoris, a few at a time, and fry until golden brown and crispy, about 3-4 minutes on each side.
  7. Remove kachoris and drain on paper towels. Serve hot with chutney or yogurt.
