- Semolina (Sooji) - 1/2 cup
- Ghee - 2 tablespoons
- Water - 1 cup
- Almonds (chopped) - 2 tablespoons
- Cashews (chopped) - 2 tablespoons
- Sugar - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Raisins - 1 tablespoon
- Salt - a pinch
Steps
- Heat the ghee in a non-stick pan over medium heat.
- Add the semolina and roast it until it turns light golden brown, stirring continuously (about 5-7 minutes).
- In a separate pot, bring 1 cup of water to a boil.
- Carefully add the boiling water to the roasted semolina, stirring continuously to avoid lumps.
- Add sugar, cardamom powder, and a pinch of salt, mixing well.
- Reduce the heat to low, cover the pan, and let it cook for about 5 minutes until the water is absorbed.
- Stir in the chopped almonds, cashews, and raisins, cooking for an additional 2-3 minutes.
- Remove from heat and let it sit for a couple of minutes before serving.
