Ingredients

  • Semolina (Sooji) - 1/2 cup
  • Ghee - 2 tablespoons
  • Water - 1 cup
  • Almonds (chopped) - 2 tablespoons
  • Cashews (chopped) - 2 tablespoons
  • Sugar - 2 tablespoons
  • Cardamom powder - 1/4 teaspoon
  • Raisins - 1 tablespoon
  • Salt - a pinch

Steps

  1. Heat the ghee in a non-stick pan over medium heat.
  2. Add the semolina and roast it until it turns light golden brown, stirring continuously (about 5-7 minutes).
  3. In a separate pot, bring 1 cup of water to a boil.
  4. Carefully add the boiling water to the roasted semolina, stirring continuously to avoid lumps.
  5. Add sugar, cardamom powder, and a pinch of salt, mixing well.
  6. Reduce the heat to low, cover the pan, and let it cook for about 5 minutes until the water is absorbed.
  7. Stir in the chopped almonds, cashews, and raisins, cooking for an additional 2-3 minutes.
  8. Remove from heat and let it sit for a couple of minutes before serving.
