- Semolina (Sooji) - 100 grams
- Water - 400 ml
- Coconut oil - 2 tablespoons
- Brown sugar - 50 grams
- Cardamom powder - 1/2 teaspoon
- Cashews - 2 tablespoons
- Raisins - 2 tablespoons
- Salt - a pinch
Steps
- In a pan, heat the coconut oil over medium heat.
- Add the semolina and roast it for about 5-7 minutes until it turns golden brown and aromatic, stirring continuously to prevent burning.
- In a separate pot, bring the water to a boil and add a pinch of salt.
- Once the semolina is roasted, carefully pour the boiling water into the pan, stirring constantly to avoid lumps.
- Add the brown sugar and cardamom powder, mixing well until everything is combined.
- Reduce the heat to low, cover the pan, and let it simmer for about 5 minutes until the water is absorbed.
- In the last minute of cooking, add the cashews and raisins, mixing them in gently.
- Once done, remove from heat and let it sit for a couple of minutes before serving.
