Ingredients

  • Semolina (Sooji) - 100 grams
  • Water - 400 ml
  • Coconut oil - 2 tablespoons
  • Brown sugar - 50 grams
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 2 tablespoons
  • Raisins - 2 tablespoons
  • Salt - a pinch

Steps

  1. In a pan, heat the coconut oil over medium heat.
  2. Add the semolina and roast it for about 5-7 minutes until it turns golden brown and aromatic, stirring continuously to prevent burning.
  3. In a separate pot, bring the water to a boil and add a pinch of salt.
  4. Once the semolina is roasted, carefully pour the boiling water into the pan, stirring constantly to avoid lumps.
  5. Add the brown sugar and cardamom powder, mixing well until everything is combined.
  6. Reduce the heat to low, cover the pan, and let it simmer for about 5 minutes until the water is absorbed.
  7. In the last minute of cooking, add the cashews and raisins, mixing them in gently.
  8. Once done, remove from heat and let it sit for a couple of minutes before serving.
