- Ginger (grated) - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Oil - 1 tablespoon
- Fresh coriander (chopped) - for garnish
Steps
- In a mixing bowl, combine semolina, yogurt, water, turmeric powder, salt, chopped green chili, and grated ginger to form a smooth batter.
- Let the batter rest for 15 minutes, allowing the semolina to absorb moisture.
- After resting, add baking soda to the batter and mix gently until well combined.
- Prepare a steaming setup by filling a pot with water and bringing it to a boil. Grease a dhokla mold or a shallow round dish with oil.
- Pour the batter into the greased mold and spread it evenly.
- Once the water is boiling, place the mold in the steamer and cover it. Steam for 15-20 minutes until a toothpick inserted comes out clean.
- In a small pan, heat oil over medium heat. Add mustard seeds and curry leaves, and let them crackle.
- Pour the tempering over the steamed dhokla and garnish with chopped coriander.
- Cut into squares and serve hot with green chutney.
