  • Baking soda - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Oil - 1 tablespoon
  • Fresh coriander (chopped) - for garnish

Steps

  1. In a mixing bowl, combine semolina, yogurt, water, turmeric powder, salt, chopped green chili, and grated ginger to form a smooth batter.
  2. Let the batter rest for 15 minutes, allowing the semolina to absorb moisture.
  3. After resting, add baking soda to the batter and mix gently until well combined.
  4. Prepare a steaming setup by filling a pot with water and bringing it to a boil. Grease a dhokla mold or a shallow round dish with oil.
  5. Pour the batter into the greased mold and spread it evenly.
  6. Once the water is boiling, place the mold in the steamer and cover it. Steam for 15-20 minutes until a toothpick inserted comes out clean.
  7. In a small pan, heat oil over medium heat. Add mustard seeds and curry leaves, and let them crackle.
  8. Pour the tempering over the steamed dhokla and garnish with chopped coriander.
  9. Cut into squares and serve hot with green chutney.
