- Semolina (Sooji) - 100 grams
- Ghee - 50 grams
- Sugar - 75 grams
- Water - 200 milliliters
- Cardamom powder - 1/4 teaspoon
- Chopped nuts (almonds, cashews) - 30 grams
- Raisins - 15 grams
- Saffron strands - a pinch
Steps
- In a pan, heat 50 grams of ghee on medium heat until melted.
- Add 100 grams of semolina to the ghee and roast it, stirring continuously until it turns golden brown and aromatic, about 5-7 minutes.
- In a separate saucepan, combine 200 milliliters of water and 75 grams of sugar. Heat until the sugar dissolves completely.
- Once the semolina is roasted, carefully pour the sugar syrup into the pan while stirring continuously to avoid lumps.
- Add 1/4 teaspoon of cardamom powder, chopped nuts, raisins, and saffron strands. Mix well and cook for another 3-4 minutes until the mixture thickens.
- Grease a plate or a tray with ghee and pour the mixture onto it, spreading it evenly with a spatula.
- Allow it to cool for about 10-15 minutes, then cut into squares or diamond shapes.
