Ingredients

  • All-purpose flour - 50 grams
  • Ghee (clarified butter) - 40 grams
  • Sugar - 100 grams
  • Water - 60 ml
  • Cardamom powder - 1/4 teaspoon
  • Chopped pistachios - 10 grams
  • Chopped almonds - 10 grams
  • Cornstarch - 20 grams

Steps

  1. In a pan, heat ghee over low-medium heat and add all-purpose flour. Roast until golden brown, stirring continuously (about 8-10 minutes).
  2. In another saucepan, combine sugar and water. Cook on medium heat until the sugar dissolves completely, then bring to a boil and cook until it reaches a one-string consistency (approximately 8-10 minutes).
  3. Slowly pour the sugar syrup into the roasted flour while continuously stirring to avoid lumps. Add cornstarch and mix thoroughly until well combined.
  4. Add cardamom powder and mix well. Cook for an additional 5-7 minutes until the mixture starts to pull away from the sides of the pan.
  5. Grease a flat surface or tray with ghee. Pour the mixture onto it and spread evenly. Allow it to cool for 10-15 minutes.
  6. Once slightly cooled, use a knife to cut into squares or diamond shapes. Garnish with chopped pistachios and almonds before completely cooling.
  7. Let it set for another 30 minutes at room temperature before serving.
