Ingredients
- Cauliflower - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Olive oil - 1 tablespoon

- Black pepper - 1/4 teaspoon
- Smoked salmon - 100 grams
- Cream cheese (dairy-free) - 50 grams
- Fresh dill - 1 tablespoon, chopped
- Fresh chives - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- Cut the cauliflower into florets and steam until tender, about 8-10 minutes.
- Once steamed, allow the cauliflower to cool slightly, then drain any excess water and blend in a food processor until it resembles rice.
- In a bowl, combine the cauliflower rice, almond flour, egg, olive oil, salt, and black pepper. Mix until a dough forms.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a round crust about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
- While the crust is baking, mix the cream cheese, fresh dill, chives, and lemon juice in a bowl until well combined.
- Once the crust is ready, remove it from the oven and spread the cream cheese mixture evenly over the top.
- Top with the smoked salmon pieces and return to the oven for an additional 5-7 minutes to warm through.
