- Red chili powder - 1 teaspoon

- Mustard seeds - 1 teaspoon
- Fenugreek seeds - ½ teaspoon
- Onion (finely chopped) - 1 medium
- Tomato (chopped) - 1 medium
- Spinach (chopped) - 100 grams
- Carrot (sliced) - 1 medium
- Green chili (slit) - 1
- Salt - to taste
- Oil (for cooking) - 2 tablespoons
- Fresh coriander leaves (for garnish) - a handful
Steps
- In a mixing bowl, combine chickpea flour, turmeric powder, red chili powder, and salt. Gradually add water to make a smooth batter, then set aside.
- Heat oil in a pan over medium heat. Add cumin seeds, mustard seeds, and fenugreek seeds; let them splutter.
- Add the chopped onions and sauté until golden brown. Then add the chopped tomatoes and cook until they soften.
- Stir in the chopped spinach, carrot slices, and green chili. Cook for 5-7 minutes until the vegetables soften.
- Pour the prepared chickpea flour batter into the pan, stirring continuously to avoid lumps. Cook on low heat for about 10-15 minutes until it thickens.
- In a separate bowl, whisk the yogurt until smooth. Slowly add the yogurt to the karhi, mixing well.
- Simmer for an additional 5 minutes, adjusting consistency with water if necessary.
- Garnish with fresh coriander leaves and serve hot with steamed rice or gluten-free flatbreads.
