Ingredients

  • Shrimp - 300 grams, peeled and deveined
  • Coconut milk - 200 ml
  • Coconut flour - 50 grams
  • Ghee - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, marinate the shrimp with turmeric powder, coriander powder, cumin powder, salt, black pepper, and lemon juice. Let it sit for 15 minutes.
  2. In a saucepan, bring the coconut milk to a simmer over medium heat.
  3. Gradually whisk in the coconut flour into the simmering coconut milk until combined and thickened. Season with salt to taste. Remove from heat and set aside.
  4. In a skillet, heat ghee over medium heat, then add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  5. Add the marinated shrimp to the skillet and cook for 2-3 minutes on each side, or until the shrimp are pink and cooked through.
  6. To serve, spoon the coconut grits onto plates, top with the shrimp, and garnish with fresh cilantro.
