- Saffron strands - a pinch (optional)
- Warm water - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Rinse the shirataki noodles under cold water and drain them well. Set aside.
- In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add sliced onions and sauté until they turn golden brown.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the chopped mixed vegetables and cook for 3-4 minutes until slightly tender.
- Sprinkle in the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well to coat the vegetables with spices.
- Add the drained shirataki noodles to the pan, stirring gently to combine with the vegetable mixture.
- If using saffron, dissolve it in the warm water and drizzle over the noodles. Mix well.
- Cook for another 5-7 minutes, allowing the flavors to meld, stirring occasionally.
- Remove from heat and garnish with fresh cilantro before serving.
