Ingredients

  • Shirataki noodles - 200 grams

  • Mixed vegetables (carrots, peas, bell peppers) - 1 cup, chopped
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Salt - to taste
  • Saffron strands - a pinch (optional)
  • Warm water - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Rinse the shirataki noodles under cold water and drain them well. Set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add sliced onions and sauté until they turn golden brown.
  4. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  5. Add the chopped mixed vegetables and cook for 3-4 minutes until slightly tender.
  6. Sprinkle in the coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well to coat the vegetables with spices.
  7. Add the drained shirataki noodles to the pan, stirring gently to combine with the vegetable mixture.
  8. If using saffron, dissolve it in the warm water and drizzle over the noodles. Mix well.
  9. Cook for another 5-7 minutes, allowing the flavors to meld, stirring occasionally.
  10. Remove from heat and garnish with fresh cilantro before serving.
