Ingredients

  • Moong dal (split yellow lentils) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger-garlic paste - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish
  • Lemon juice - 1 tablespoon
  • Sev (crispy chickpea noodles) - for topping

Steps

  1. Soak the moong dal in water for 4-6 hours or overnight, then drain and sprout for 24 hours.
  2. In a pan, heat the oil over medium heat, add mustard seeds, and let them splutter.
  3. Add cumin seeds, chopped onions, and sauté until the onions become translucent.
  4. Stir in the ginger-garlic paste and slit green chili, and cook for another minute.
  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
  6. Add the sprouted moong dal and enough water to cover it. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the dal is cooked through.
  7. Adjust seasoning and stir in lemon juice.
  8. Serve hot, garnished with fresh coriander leaves and topped with sev.
