Ingredients
- Moong dal (split yellow lentils) - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, slit
- Ginger-garlic paste - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Oil - 1 tablespoon
- Salt - to taste
- Fresh coriander leaves - for garnish
- Lemon juice - 1 tablespoon
- Sev (crispy chickpea noodles) - for topping
Steps
- Soak the moong dal in water for 4-6 hours or overnight, then drain and sprout for 24 hours.
- In a pan, heat the oil over medium heat, add mustard seeds, and let them splutter.
- Add cumin seeds, chopped onions, and sauté until the onions become translucent.
- Stir in the ginger-garlic paste and slit green chili, and cook for another minute.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.
- Add the sprouted moong dal and enough water to cover it. Bring to a boil, then reduce heat and simmer for about 10-15 minutes until the dal is cooked through.
- Adjust seasoning and stir in lemon juice.
- Serve hot, garnished with fresh coriander leaves and topped with sev.
