- Ripe tomatoes - 400 grams, chopped
- Onion - 1 medium, finely chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - 2 tablespoons, chopped
- Sev - 50 grams
- Oil - 2 tablespoons
- Water - 100 ml
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, green chili, ginger, and garlic. Sauté until the onions turn translucent.
- Stir in turmeric powder, coriander powder, and salt. Cook for 2 minutes.
- Add the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
- Pour in the water, stir well, and let it simmer for another 5 minutes until the mixture thickens.
- Sprinkle garam masala and mix well. Remove from heat and garnish with fresh coriander leaves.
- Serve hot, topped with sev for added crunch.
