Ingredients

  • Ripe tomatoes - 400 grams, chopped
  • Onion - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Sev - 50 grams
  • Oil - 2 tablespoons
  • Water - 100 ml

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add chopped onions, green chili, ginger, and garlic. Sauté until the onions turn translucent.
  3. Stir in turmeric powder, coriander powder, and salt. Cook for 2 minutes.
  4. Add the chopped tomatoes and cook until they soften and release their juices, about 5-7 minutes.
  5. Pour in the water, stir well, and let it simmer for another 5 minutes until the mixture thickens.
  6. Sprinkle garam masala and mix well. Remove from heat and garnish with fresh coriander leaves.
  7. Serve hot, topped with sev for added crunch.
