- Green chili (finely chopped) - 1
- Coriander leaves (chopped) - 2 tablespoons
- Sev (crispy gram flour noodles) - 50 grams
- Chaat masala - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Sweet tamarind chutney - 2 tablespoons
- Green chutney (coriander-mint) - 2 tablespoons
- Lemon juice - 1 teaspoon
Steps
- Boil the potatoes until soft, then peel and mash them in a bowl.
- Add finely chopped onion, tomato, green chili, coriander leaves, chaat masala, cumin powder, and salt to the mashed potatoes. Mix well to combine.
- Prepare the serving plates by placing 6 puris on each plate.
- Spoon a generous amount of the potato mixture onto each puri.
- Drizzle sweet tamarind chutney and green chutney over the potato topping.
- Sprinkle sev generously on top of each puri.
- Finish with a squeeze of lemon juice and garnish with additional coriander leaves if desired.
