  • Gram flour (besan) - 100 grams
  • Rice flour - 25 grams

  • Cumin powder - 1/2 teaspoon
  • Ajwain (carom seeds) - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 60 milliliters
  • Oil for frying - 500 milliliters

Steps

  1. In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chili powder, cumin powder, ajwain, and salt.
  2. Gradually add water to the flour mixture, stirring continuously until a smooth, thick batter forms.
  3. Heat oil in a deep frying pan over medium heat.
  4. Once the oil is hot, place the batter in a sev maker or a piping bag fitted with a fine nozzle.
  5. Press the batter into the hot oil in circular motions to form thin strands.
  6. Fry until the sev turns golden brown and crispy, about 3-4 minutes.
  7. Remove the sev from the oil using a slotted spoon and drain on paper towels to remove excess oil.
  8. Allow the sev to cool completely before storing or serving.
