  • Mussels - 100 grams, cleaned
  • Squid - 100 grams, sliced
  • Coconut Oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Red Bell Pepper - 1, diced
  • Tomato - 1 medium, chopped
  • Turmeric Powder - 1 teaspoon
  • Cumin Powder - 1 teaspoon
  • Coriander Powder - 1 teaspoon
  • Garam Masala - 1 teaspoon
  • Salt - to taste
  • Black Pepper - to taste
  • Fresh Cilantro - for garnish
  • Lemon Wedges - for serving

Steps

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the chopped onion, garlic, and ginger, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and cook for another 2-3 minutes.
  4. Add the chopped tomato, turmeric, cumin, coriander, garam masala, salt, and black pepper; cook for 5 minutes until the tomato softens.
  5. Incorporate the cauliflower rice into the mixture, stirring well to combine and cook for another 5 minutes.
  6. Add the shrimp, mussels, and squid; cover the skillet and cook for about 5-7 minutes, or until the seafood is cooked through and the mussels have opened.
  7. Remove from heat and let it sit for a couple of minutes. Garnish with fresh cilantro.
  8. Serve hot with lemon wedges on the side.
