Ingredients

  • Rolled oats - 1 cup
  • Water - 1.5 cups
  • Chickpea flour (besan) - 2 tablespoons
  • Onion (finely chopped) - 1 small
  • Tomato (finely chopped) - 1 medium
  • Green chili (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves (chopped) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Baking powder - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine rolled oats, chickpea flour, baking powder, turmeric powder, red chili powder, and salt.
  3. In a skillet, heat olive oil over medium heat and add cumin seeds. Once they start to sizzle, add chopped onions and sauté until translucent.
  4. Add grated ginger, chopped green chili, and chopped tomato to the skillet. Cook for 3-4 minutes until the tomatoes soften.
  5. Pour in the water and bring the mixture to a simmer. Once boiling, remove from heat.
  6. Add the sautéed vegetable mixture to the dry ingredients and mix well. Fold in chopped coriander leaves.
  7. Pour the mixture into a greased baking dish and spread it evenly.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before slicing and serving.
