Ingredients

  • Dandelion greens - 200 grams
  • Coconut oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Tomato - 1 medium, diced
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Red chili powder - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the dandelion greens thoroughly under cold water to remove any dirt and grit. Pat dry and chop into bite-sized pieces.
  2. In a large skillet, heat the coconut oil over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  4. Stir in the diced tomato, turmeric, cumin, coriander, red chili powder, salt, and black pepper. Cook for about 2-3 minutes until the tomatoes soften.
  5. Add the chopped dandelion greens to the skillet, stirring well to coat with the spices. Sauté for about 5-7 minutes until the greens are wilted and tender.
  6. Remove from heat and drizzle with lemon juice. Toss gently to combine.
  7. Serve hot, garnished with fresh cilantro.
