Sarson Da Saag

Ingredients
- Mustard greens (Sarson) - 300 grams, washed and chopped
- Spinach - 100 grams, washed and chopped
- Green chilies - 2, finely chopped
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 tablespoon
- Cornmeal (Makki ka atta) - 2 tablespoons
- Yellow lentils (Moong dal) - 100 grams, soaked for 30 minutes
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Butter - 2 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- In a large pot, add soaked yellow lentils and 500 ml of water. Bring to a boil, then reduce heat and simmer until lentils are soft, about 15-20 minutes.
- In a separate pan, heat 1 tablespoon of butter over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste and green chilies, cooking for another 2 minutes.
- Add the pureed tomato, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture, about 5 minutes.
- Add chopped mustard greens and spinach to the pan, mixing well. Cook for 10-15 minutes until the greens are soft.
- Add the cooked lentils to the greens mixture, stirring well. Mix in cornmeal to thicken the consistency, and let it simmer for another 5 minutes.
- Finish with garam masala and the remaining tablespoon of butter. Stir well and cook for an additional 2 minutes.
- Serve hot with makki di roti (corn flatbread) or rice.
