- Coconut milk - 200 ml
- Fresh grated coconut - 100 g
- Jaggery (grated) - 50 g
- Cardamom powder - 1/4 tsp
- Almonds (chopped) - 2 tbsp
- Pistachios (chopped) - 2 tbsp
- Vanilla extract - 1/2 tsp
Steps
- In a saucepan, combine the coconut milk and grated coconut over medium heat. Stir continuously until the mixture thickens, about 10-15 minutes.
- Add the grated jaggery and cardamom powder to the thickened coconut mixture. Mix well until the jaggery is completely dissolved.
- Remove the mixture from heat and stir in the vanilla extract. Allow the mixture to cool slightly.
- Once the mixture has cooled enough to handle, shape it into small round balls or flatten them into discs using your hands.
- Garnish each Sandesh with chopped almonds and pistachios, pressing them lightly into the surface.
- Refrigerate the Sandesh for at least 15 minutes before serving to firm up.
