Ingredients

  • Coconut milk - 200 ml
  • Fresh grated coconut - 100 g
  • Jaggery (grated) - 50 g
  • Cardamom powder - 1/4 tsp
  • Almonds (chopped) - 2 tbsp
  • Pistachios (chopped) - 2 tbsp
  • Vanilla extract - 1/2 tsp

Steps

  1. In a saucepan, combine the coconut milk and grated coconut over medium heat. Stir continuously until the mixture thickens, about 10-15 minutes.
  2. Add the grated jaggery and cardamom powder to the thickened coconut mixture. Mix well until the jaggery is completely dissolved.
  3. Remove the mixture from heat and stir in the vanilla extract. Allow the mixture to cool slightly.
  4. Once the mixture has cooled enough to handle, shape it into small round balls or flatten them into discs using your hands.
  5. Garnish each Sandesh with chopped almonds and pistachios, pressing them lightly into the surface.
  6. Refrigerate the Sandesh for at least 15 minutes before serving to firm up.
