Ingredients

  • Potatoes - 200 g
  • Green peas - 100 g
  • Onion - 1 medium, finely chopped
  • Ginger - 1 tsp, grated
  • Garlic - 1 tsp, minced
  • Cumin seeds - 1/2 tsp
  • Coriander powder - 1 tsp
  • Garam masala - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Salt - to taste
  • Cilantro - 2 tbsp, chopped
  • Olive oil - 2 tbsp
  • Whole wheat tortillas - 2 large
  • Lemon juice - 1 tbsp
  • Chili powder - 1/4 tsp (optional)

Steps

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and mash them in a large bowl.
  2. In a pan, heat olive oil over medium heat. Add cumin seeds, and when they start to crackle, add chopped onions, ginger, and garlic. Sauté until onions are translucent.
  3. Add green peas, coriander powder, garam masala, turmeric powder, salt, and chili powder (if using). Cook for an additional 5 minutes, stirring occasionally.
  4. Combine the sautéed mixture with the mashed potatoes. Add lemon juice and chopped cilantro. Mix well and adjust salt to taste.
  5. Lay a tortilla on a flat surface and spoon a generous amount of the potato filling along one edge. Roll the tortilla tightly to enclose the filling, folding in the sides as you roll.
  6. Heat a non-stick pan over medium heat. Place the wrap seam-side down, and cook for 3-4 minutes on each side until golden and crispy.
  7. Serve hot with mint chutney or yogurt on the side.
