Ingredients
- Potatoes - 200 g
- Green peas - 100 g
- Onion - 1 medium, finely chopped
- Ginger - 1 tsp, grated
- Garlic - 1 tsp, minced
- Cumin seeds - 1/2 tsp
- Coriander powder - 1 tsp
- Garam masala - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Salt - to taste
- Cilantro - 2 tbsp, chopped
- Olive oil - 2 tbsp
- Whole wheat tortillas - 2 large
- Lemon juice - 1 tbsp
- Chili powder - 1/4 tsp (optional)
Steps
- Boil the potatoes in salted water until tender, about 15 minutes. Drain, peel, and mash them in a large bowl.
- In a pan, heat olive oil over medium heat. Add cumin seeds, and when they start to crackle, add chopped onions, ginger, and garlic. Sauté until onions are translucent.
- Add green peas, coriander powder, garam masala, turmeric powder, salt, and chili powder (if using). Cook for an additional 5 minutes, stirring occasionally.
- Combine the sautéed mixture with the mashed potatoes. Add lemon juice and chopped cilantro. Mix well and adjust salt to taste.
- Lay a tortilla on a flat surface and spoon a generous amount of the potato filling along one edge. Roll the tortilla tightly to enclose the filling, folding in the sides as you roll.
- Heat a non-stick pan over medium heat. Place the wrap seam-side down, and cook for 3-4 minutes on each side until golden and crispy.
- Serve hot with mint chutney or yogurt on the side.
