Samosa Bites
Samosa Bites are delightful, bite-sized pastries filled with a spiced potato and pea mixture, perfect for snacking. These kosher treats are crispy on the outside and bursting with flavor on the inside, making them an ideal appetizer for any gathering.

Ingredients
- all-purpose flour - 150 grams
- vegetable oil - 30 ml (for dough) + 500 ml (for frying)
- water - 60 ml (for dough)
- potatoes - 200 grams (boiled and mashed)
- green peas - 100 grams (cooked)
- onion - 1 small (finely chopped)
- ginger - 1 teaspoon (grated)
- garam masala - 1 teaspoon
- cumin seeds - 1/2 teaspoon
- coriander powder - 1/2 teaspoon
- turmeric powder - 1/4 teaspoon
- red chili powder - 1/2 teaspoon
- salt - to taste
- fresh cilantro - 2 tablespoons (chopped)
- lemon juice - 1 teaspoon
Steps
- In a bowl, mix the all-purpose flour, 30 ml vegetable oil, and a pinch of salt. Gradually add water and knead until you have a smooth dough. Cover and let it rest for 20 minutes.
- In a pan, heat 1 tablespoon of vegetable oil. Sauté the chopped onion and grated ginger until the onion is translucent.
- Add the boiled mashed potatoes, cooked green peas, garam masala, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt to the pan. Mix well and cook for 5 minutes. Stir in the chopped cilantro and lemon juice. Remove from heat and let cool.
- Divide the rested dough into small balls (about 25 grams each). Roll each ball into a thin circle (about 10 cm in diameter).
- Cut the circle in half to form two semi-circles. Take one semi-circle, and fold it into a cone shape, sealing the edge with a little water. Fill the cone with the potato mixture and seal the open edge with water, pinching it tight.
- Repeat the process for the remaining dough and filling.
- In a deep pan, heat the vegetable oil for frying. Once hot, fry the samosa bites in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.
- Serve hot with mint chutney or tamarind sauce.
