Ingredients

  • All-purpose flour - 1 cup
  • Potatoes - 2 medium, boiled and mashed
  • Green peas - 1/2 cup, cooked
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Green chili - 1, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Oil - 2 tablespoons (for filling) + oil for frying
  • Water - as needed for dough

Steps

  1. In a mixing bowl, combine 1 cup all-purpose flour and 1/4 teaspoon salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
  2. In a skillet, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon cumin seeds and let them splutter.
  3. Add the boiled and mashed potatoes, 1/2 cup cooked green peas, 1 teaspoon coriander powder, 1/2 teaspoon garam masala, 1/4 teaspoon turmeric powder, 1 finely chopped green chili, and 1 teaspoon salt. Mix well and cook for 5 minutes. Stir in 2 tablespoons chopped cilantro and remove from heat.
  4. Divide the dough into 4 equal parts. Roll each part into a ball and then flatten it into a circle about 10 cm in diameter.
  5. Cut each circle in half to form two semi-circles. Take one semi-circle, and fold it into a cone shape, sealing the edge with a little water.
  6. Fill the cone with the potato filling, and then seal the open edge by pressing it together. Repeat for the remaining dough and filling.
  7. In a deep pan, heat oil for frying over medium heat. Once hot, carefully add the samosas, a few at a time, and fry until golden brown and crispy on all sides. Drain on paper towels.
  8. Serve hot with mint chutney.
