Samosa
These Vegan Samosas are a delightful Indian breakfast treat, stuffed with spiced potatoes and peas, enveloped in a crispy pastry. Perfectly paired with mint chutney, they offer a savory start to your day.

Ingredients
- All-purpose flour - 1 cup
- Potatoes - 2 medium, boiled and mashed
- Green peas - 1/2 cup, cooked
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chili - 1, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Oil - 2 tablespoons (for filling) + oil for frying
- Water - as needed for dough
Steps
- In a mixing bowl, combine 1 cup all-purpose flour and 1/4 teaspoon salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 15 minutes.
- In a skillet, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon cumin seeds and let them splutter.
- Add the boiled and mashed potatoes, 1/2 cup cooked green peas, 1 teaspoon coriander powder, 1/2 teaspoon garam masala, 1/4 teaspoon turmeric powder, 1 finely chopped green chili, and 1 teaspoon salt. Mix well and cook for 5 minutes. Stir in 2 tablespoons chopped cilantro and remove from heat.
- Divide the dough into 4 equal parts. Roll each part into a ball and then flatten it into a circle about 10 cm in diameter.
- Cut each circle in half to form two semi-circles. Take one semi-circle, and fold it into a cone shape, sealing the edge with a little water.
- Fill the cone with the potato filling, and then seal the open edge by pressing it together. Repeat for the remaining dough and filling.
- In a deep pan, heat oil for frying over medium heat. Once hot, carefully add the samosas, a few at a time, and fry until golden brown and crispy on all sides. Drain on paper towels.
- Serve hot with mint chutney.
