Ingredients

  • Cauliflower - 200 grams, grated
  • Salmon roe - 100 grams
  • Nori sheets - 2 sheets
  • Avocado - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Lemon juice - 1 tablespoon
  • Sea salt - to taste
  • Chives - 2 tablespoons, finely chopped

Steps

  1. Grate the cauliflower into rice-sized pieces and steam for about 5 minutes until tender, then let it cool slightly.
  2. In a mixing bowl, combine the grated cauliflower with lemon juice and sea salt, mixing well to season.
  3. Lay a sheet of nori on a bamboo sushi mat, shiny side down.
  4. Spread half of the seasoned cauliflower rice evenly over the nori, leaving a 2 cm border at the top.
  5. Arrange half of the avocado slices and cucumber julienne on top of the cauliflower rice.
  6. Carefully place half of the salmon roe along the center of the rice and vegetables.
  7. Using the bamboo mat, gently roll the sushi away from you, pressing lightly to form a tight roll.
  8. Seal the edge with a little water, then repeat the process with the second nori sheet and the remaining ingredients.
  9. Slice each roll into 6 pieces with a sharp knife, wiping the knife with a damp cloth between cuts for clean slices.
  10. Garnish with chopped chives and serve with additional lemon wedges on the side.
