Ingredients
- Cauliflower - 200 grams, grated
- Salmon roe - 100 grams
- Nori sheets - 2 sheets
- Avocado - 1 medium, sliced
- Cucumber - 1 small, julienned
- Lemon juice - 1 tablespoon
- Sea salt - to taste
- Chives - 2 tablespoons, finely chopped
Steps
- Grate the cauliflower into rice-sized pieces and steam for about 5 minutes until tender, then let it cool slightly.
- In a mixing bowl, combine the grated cauliflower with lemon juice and sea salt, mixing well to season.
- Lay a sheet of nori on a bamboo sushi mat, shiny side down.
- Spread half of the seasoned cauliflower rice evenly over the nori, leaving a 2 cm border at the top.
- Arrange half of the avocado slices and cucumber julienne on top of the cauliflower rice.
- Carefully place half of the salmon roe along the center of the rice and vegetables.
- Using the bamboo mat, gently roll the sushi away from you, pressing lightly to form a tight roll.
- Seal the edge with a little water, then repeat the process with the second nori sheet and the remaining ingredients.
- Slice each roll into 6 pieces with a sharp knife, wiping the knife with a damp cloth between cuts for clean slices.
- Garnish with chopped chives and serve with additional lemon wedges on the side.
