Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Smoked salmon - 100 grams, torn into pieces
- Red onion - 1/4 cup, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the brown rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
- Once the rice is cooked, fluff it with a fork and add to the skillet with the sautéed onions and garlic.
- Stir in the smoked salmon, fresh dill, lemon juice, salt, and black pepper. Mix gently to combine and heat through for an additional 2-3 minutes.
- Serve warm, garnished with additional dill if desired.
