Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Smoked salmon - 100 grams, torn into pieces
  • Red onion - 1/4 cup, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh dill - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes or until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat olive oil in a skillet over medium heat. Add the chopped red onion and minced garlic, sautéing until the onion is translucent, about 3-5 minutes.
  4. Once the rice is cooked, fluff it with a fork and add to the skillet with the sautéed onions and garlic.
  5. Stir in the smoked salmon, fresh dill, lemon juice, salt, and black pepper. Mix gently to combine and heat through for an additional 2-3 minutes.
  6. Serve warm, garnished with additional dill if desired.
