Sakkarai Pongal

Ingredients

  • Raw rice - 100 grams
  • Split yellow moong dal - 30 grams
  • Jaggery (grated) - 80 grams
  • Water - 500 ml
  • Ghee - 1 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 10 grams
  • Raisins - 10 grams
  • Salt - a pinch

Steps

  1. Rinse the raw rice and split yellow moong dal together in water until the water runs clear.
  2. In a saucepan, add the rinsed rice and moong dal with 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice and dal are soft and cooked.
  3. While the rice and dal are cooking, heat 1 tablespoon of ghee in a small pan over medium heat.
  4. Add the cashews and raisins to the ghee and sauté until the cashews turn golden brown and the raisins puff up. Remove from heat and set aside.
  5. Once the rice and dal are cooked, add the grated jaggery and a pinch of salt into the pot. Stir well until the jaggery is completely melted and mixed in.
  6. Add cardamom powder and the sautéed nuts and raisins into the mixture. Stir well to combine all the ingredients.
  7. Cook for an additional 2-3 minutes on low heat to enhance the flavors, then remove from heat and serve warm.
