Sakkarai Pongal

- Raw rice - 100 grams
- Split yellow moong dal - 30 grams
- Jaggery (grated) - 80 grams
- Water - 500 ml
- Ghee - 1 tablespoon
- Cardamom powder - 1/2 teaspoon
- Cashews - 10 grams
- Raisins - 10 grams
- Salt - a pinch
Steps
- Rinse the raw rice and split yellow moong dal together in water until the water runs clear.
- In a saucepan, add the rinsed rice and moong dal with 500 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice and dal are soft and cooked.
- While the rice and dal are cooking, heat 1 tablespoon of ghee in a small pan over medium heat.
- Add the cashews and raisins to the ghee and sauté until the cashews turn golden brown and the raisins puff up. Remove from heat and set aside.
- Once the rice and dal are cooked, add the grated jaggery and a pinch of salt into the pot. Stir well until the jaggery is completely melted and mixed in.
- Add cardamom powder and the sautéed nuts and raisins into the mixture. Stir well to combine all the ingredients.
- Cook for an additional 2-3 minutes on low heat to enhance the flavors, then remove from heat and serve warm.
