Ingredients
- Basmati rice - 1 cup (200g)
- Water - 2 cups (480ml)
- Saffron strands - 1/4 teaspoon (1g)
- Vegetable oil - 1 tablespoon (15ml)
- Cumin seeds - 1/2 teaspoon (2g)
- Bay leaf - 1
- Cloves - 2
- Cardamom pods - 2
- Salt - 1 teaspoon (5g)
- Peas (fresh or frozen) - 1/2 cup (75g)
- Fresh cilantro (for garnish) - a handful
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a small bowl, soak the saffron strands in 2 tablespoons of warm water to release their color and flavor.
- In a medium pot, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, cloves, and cardamom pods, sautéing for about 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices for about 2 minutes.
- Add the water, saffron mixture (including the strands), and salt to the pot, bringing it to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it cook for 15 minutes without lifting the lid.
- After 15 minutes, add the peas on top of the rice, cover, and let it rest for an additional 5 minutes off the heat.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
