Ingredients
- Sabudana (tapioca pearls) - 1 cup
- Potato - 1 medium (about 200 grams), boiled and mashed
- Peanut powder - 1/4 cup
- Green chili - 1, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Cumin seeds - 1/2 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Oil - for frying
Steps
- Rinse the sabudana in water and soak it in enough water for 4-6 hours or overnight until it becomes soft.
- Drain excess water from the soaked sabudana and transfer it to a mixing bowl.
- Add the boiled and mashed potato, peanut powder, chopped green chili, coriander leaves, cumin seeds, salt, and lemon juice to the bowl.
- Mix all the ingredients thoroughly until well combined. If the mixture is too sticky, add a little more peanut powder.
- Heat oil in a frying pan over medium heat.
- While the oil is heating, take a small portion of the mixture and shape it into a flat patty (vada). Repeat for the remaining mixture.
- Once the oil is hot, carefully place the vadas in the pan, ensuring not to overcrowd them.
- Fry the vadas for about 3-4 minutes on each side or until they turn golden brown and crispy.
- Remove the vadas from the pan and drain excess oil on a paper towel.
- Serve hot with green chutney or yogurt.
