Ingredients

  • Sabudana (tapioca pearls) - 1 cup
  • Potato - 1 medium (about 200 grams), boiled and mashed
  • Peanut powder - 1/4 cup
  • Green chili - 1, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin seeds - 1/2 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon
  • Oil - for frying

Steps

  1. Rinse the sabudana in water and soak it in enough water for 4-6 hours or overnight until it becomes soft.
  2. Drain excess water from the soaked sabudana and transfer it to a mixing bowl.
  3. Add the boiled and mashed potato, peanut powder, chopped green chili, coriander leaves, cumin seeds, salt, and lemon juice to the bowl.
  4. Mix all the ingredients thoroughly until well combined. If the mixture is too sticky, add a little more peanut powder.
  5. Heat oil in a frying pan over medium heat.
  6. While the oil is heating, take a small portion of the mixture and shape it into a flat patty (vada). Repeat for the remaining mixture.
  7. Once the oil is hot, carefully place the vadas in the pan, ensuring not to overcrowd them.
  8. Fry the vadas for about 3-4 minutes on each side or until they turn golden brown and crispy.
  9. Remove the vadas from the pan and drain excess oil on a paper towel.
  10. Serve hot with green chutney or yogurt.
