Ingredients

  • Sabudana (tapioca pearls) - 1 cup
  • Peanuts (roasted and coarsely ground) - 1/4 cup
  • Potato (boiled and diced) - 1 medium
  • Green chilies (finely chopped) - 1-2
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - 10-12 leaves
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Oil (preferably peanut or coconut) - 2 tablespoons

Steps

  1. Rinse the sabudana under running water until the water runs clear, then soak in enough water to cover for 4-6 hours or overnight.
  2. After soaking, drain any excess water and let the sabudana sit for a few minutes to dry out slightly.
  3. In a pan, heat oil over medium heat and add cumin seeds and mustard seeds. Allow them to splutter.
  4. Add the curry leaves and chopped green chilies to the pan, sautéing for a minute until fragrant.
  5. Stir in the diced boiled potato and turmeric powder, cooking for 2-3 minutes until the potatoes are heated through.
  6. Add the soaked sabudana and salt to the pan. Gently mix everything together, ensuring the sabudana is well-coated with spices and not sticking together.
  7. Cook for 5-7 minutes, stirring occasionally, until the sabudana becomes translucent and cooked through.
  8. Remove from heat, stir in the ground peanuts, chopped coriander, and lemon juice.
  9. Serve hot, garnished with additional coriander if desired.
