- Peanuts (roasted and coarsely ground) - 1/4 cup
- Potato (boiled and diced) - 1 medium
- Green chilies (finely chopped) - 1-2
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - 10-12 leaves
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Oil (preferably peanut or coconut) - 2 tablespoons
Steps
- Rinse the sabudana under running water until the water runs clear, then soak in enough water to cover for 4-6 hours or overnight.
- After soaking, drain any excess water and let the sabudana sit for a few minutes to dry out slightly.
- In a pan, heat oil over medium heat and add cumin seeds and mustard seeds. Allow them to splutter.
- Add the curry leaves and chopped green chilies to the pan, sautéing for a minute until fragrant.
- Stir in the diced boiled potato and turmeric powder, cooking for 2-3 minutes until the potatoes are heated through.
- Add the soaked sabudana and salt to the pan. Gently mix everything together, ensuring the sabudana is well-coated with spices and not sticking together.
- Cook for 5-7 minutes, stirring occasionally, until the sabudana becomes translucent and cooked through.
- Remove from heat, stir in the ground peanuts, chopped coriander, and lemon juice.
- Serve hot, garnished with additional coriander if desired.
