Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Ghee or vegetable oil - 2 tablespoons
  • Baking powder - 1/2 teaspoon
  • Semolina - 2 tablespoons

Steps

  1. In a large mixing bowl, combine the all-purpose flour, salt, sugar, and baking powder.
  2. Gradually add water and knead the mixture until it forms a smooth dough.
  3. Cover the dough with a damp cloth and let it rest for 15 minutes.
  4. After resting, divide the dough into 4 equal portions and shape each portion into a ball.
  5. Grease each ball lightly with ghee or oil, then flatten them slightly. Cover and let them rest for another 15 minutes.
  6. On a lightly oiled surface, take one ball and roll it out into a thin circle. Use your hands to stretch it further if necessary.
  7. Sprinkle some semolina on the surface of the rolled-out dough, then fold it into a rectangle, creating layers.
  8. Heat a non-stick pan over medium heat and add a little ghee or oil.
  9. Place the folded dough onto the pan and cook for 2-3 minutes on each side until golden brown and crispy.
  10. Repeat with the remaining dough portions, adding more ghee or oil as needed.
  11. Serve hot with your choice of dhal or curry.
