- Zucchini - 1 small, sliced
- Mushrooms - 100 grams, sliced
- Rogan Josh spice mix - 2 tablespoons
- Fresh cilantro - a handful, chopped
- Olive oil - 1 tablespoon

Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat olive oil over medium heat and sauté minced garlic and grated ginger until fragrant.
- Add sliced red onion, bell pepper, zucchini, and mushrooms to the skillet; cook for about 5 minutes until they begin to soften.
- Stir in the Rogan Josh spice mix and cook for another 2 minutes, ensuring the vegetables are well-coated.
- Add coconut milk to the skillet, mixing well and simmering for 2-3 minutes until slightly thickened. Remove from heat.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray or pizza stone.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Top the pizza with the spiced vegetable mixture, spreading it evenly.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Once baked, remove the pizza from the oven and garnish with chopped fresh cilantro. Season with salt and black pepper to taste.
- Slice and serve hot.
