  • Pizza dough - 200 grams
  • Tomato sauce - 100 grams
  • Coconut milk - 50 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red onion - 1 small, thinly sliced
  • Bell pepper - 1 small, sliced
  • Zucchini - 1 small, sliced
  • Mushrooms - 100 grams, sliced
  • Rogan Josh spice mix - 2 tablespoons
  • Fresh cilantro - a handful, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic and grated ginger until fragrant.
  3. Add sliced red onion, bell pepper, zucchini, and mushrooms to the skillet; cook for about 5 minutes until they begin to soften.
  4. Stir in the Rogan Josh spice mix and cook for another 2 minutes, ensuring the vegetables are well-coated.
  5. Add coconut milk to the skillet, mixing well and simmering for 2-3 minutes until slightly thickened. Remove from heat.
  6. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray or pizza stone.
  7. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  8. Top the pizza with the spiced vegetable mixture, spreading it evenly.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  10. Once baked, remove the pizza from the oven and garnish with chopped fresh cilantro. Season with salt and black pepper to taste.
  11. Slice and serve hot.
