- Lamb shoulder - 250 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 tablespoon, grated
- Yogurt - 100 grams
- Rogan josh spice mix - 2 tablespoons
- Cilantro - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Puff pastry - 250 grams
- Egg - 1, beaten (for egg wash)
Steps
- Preheat the oven to 200°C (400°F).
- In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the diced lamb and brown on all sides, then add the Rogan josh spice mix, salt, and black pepper.
- Reduce heat and add the yogurt, mixing well. Cover and simmer for 20 minutes until the lamb is tender.
- Once cooked, stir in the chopped cilantro and let the mixture cool slightly.
- Roll out the puff pastry on a floured surface. Cut out two circles, one slightly larger for the base and one for the top.
- Place the larger pastry circle in a pie dish and fill with the lamb mixture.
- Cover with the second pastry circle, sealing the edges. Cut a few slits on top for steam to escape, and brush with beaten egg.
- Bake in the preheated oven for about 25-30 minutes or until golden brown.
- Let cool for a few minutes before serving.
