Ingredients

  • Lamb shoulder - 250 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Yogurt - 100 grams
  • Rogan josh spice mix - 2 tablespoons
  • Cilantro - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Puff pastry - 250 grams
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the diced lamb and brown on all sides, then add the Rogan josh spice mix, salt, and black pepper.
  5. Reduce heat and add the yogurt, mixing well. Cover and simmer for 20 minutes until the lamb is tender.
  6. Once cooked, stir in the chopped cilantro and let the mixture cool slightly.
  7. Roll out the puff pastry on a floured surface. Cut out two circles, one slightly larger for the base and one for the top.
  8. Place the larger pastry circle in a pie dish and fill with the lamb mixture.
  9. Cover with the second pastry circle, sealing the edges. Cut a few slits on top for steam to escape, and brush with beaten egg.
  10. Bake in the preheated oven for about 25-30 minutes or until golden brown.
  11. Let cool for a few minutes before serving.
