Ingredients
- Lamb shoulder - 400 grams, cut into cubes
- Onion - 1 medium, finely sliced
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, grated
- Yogurt - 100 grams, whisked
- Ghee or vegetable oil - 2 tablespoons
- Rogan Josh spice mix - 2 tablespoons (or use 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground cardamom, 1 tsp ground cinnamon, 1 tsp paprika, and 1/2 tsp cayenne pepper)
- Salt - to taste
- Water - 300 ml
- Fresh cilantro - for garnishing
Steps
- Heat ghee or vegetable oil in a heavy-bottomed pot over medium heat.
- Add the sliced onions and sauté until they turn golden brown, about 10 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
- Add the lamb cubes to the pot and brown on all sides for about 5-7 minutes.
- Stir in the Rogan Josh spice mix and cook for 2-3 minutes, allowing the spices to toast.
- Reduce the heat and add the whisked yogurt, stirring continuously to prevent curdling.
- Season with salt and add water, bringing the mixture to a gentle simmer.
- Cover and cook on low heat for 40 minutes, stirring occasionally, until the lamb is tender.
- Garnish with fresh cilantro before serving.
- Serve hot with rice or naan.
