Ingredients

  • Lamb shoulder - 400 grams, cut into cubes
  • Onion - 1 medium, finely sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, grated
  • Yogurt - 100 grams, whisked
  • Ghee or vegetable oil - 2 tablespoons
  • Rogan Josh spice mix - 2 tablespoons (or use 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground cardamom, 1 tsp ground cinnamon, 1 tsp paprika, and 1/2 tsp cayenne pepper)
  • Salt - to taste
  • Water - 300 ml
  • Fresh cilantro - for garnishing

Steps

  1. Heat ghee or vegetable oil in a heavy-bottomed pot over medium heat.
  2. Add the sliced onions and sauté until they turn golden brown, about 10 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  4. Add the lamb cubes to the pot and brown on all sides for about 5-7 minutes.
  5. Stir in the Rogan Josh spice mix and cook for 2-3 minutes, allowing the spices to toast.
  6. Reduce the heat and add the whisked yogurt, stirring continuously to prevent curdling.
  7. Season with salt and add water, bringing the mixture to a gentle simmer.
  8. Cover and cook on low heat for 40 minutes, stirring occasionally, until the lamb is tender.
  9. Garnish with fresh cilantro before serving.
  10. Serve hot with rice or naan.
