Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, turmeric powder, garam masala, red chili powder, salt, and black pepper to create a marinade.
  2. Add the wild boar shoulder to the marinade, ensuring it is well-coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
  3. Preheat your oven to 180°C (350°F).
  4. Place the marinated wild boar shoulder in a roasting pan and cover it with aluminum foil.
  5. Roast in the preheated oven for 1 hour, then remove the foil and roast for an additional 30 minutes, or until the internal temperature reaches 72°C (160°F) and the meat is tender.
  6. Once cooked, remove from the oven and let it rest for 10 minutes before slicing.
