Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Carrot - 100 grams, diced
  • Sweet potato - 100 grams, diced
  • Beetroot - 100 grams, diced
  • Red onion - 50 grams, sliced
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Chop the cauliflower into florets and steam until tender, about 10 minutes.
  3. In a food processor, blend the steamed cauliflower until it resembles rice, then transfer it to a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower, almond flour, egg, cumin, coriander, turmeric, salt, and black pepper. Mix until a dough forms.
  5. Line a baking sheet with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  7. While the crust is baking, toss the diced carrot, sweet potato, beetroot, and red onion with olive oil, salt, and pepper in a bowl.
  8. Spread the root vegetables on a separate baking sheet and roast in the oven for 20 minutes, or until tender and slightly caramelized.
  9. Once the crust is done, remove it from the oven and top with the roasted root veggies, returning it to the oven for another 5 minutes.
