Ingredients
- Cauliflower - 300 grams
- Almond flour - 50 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Carrot - 100 grams, diced
- Sweet potato - 100 grams, diced
- Beetroot - 100 grams, diced
- Red onion - 50 grams, sliced
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (425°F).
- Chop the cauliflower into florets and steam until tender, about 10 minutes.
- In a food processor, blend the steamed cauliflower until it resembles rice, then transfer it to a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the cauliflower, almond flour, egg, cumin, coriander, turmeric, salt, and black pepper. Mix until a dough forms.
- Line a baking sheet with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
- While the crust is baking, toss the diced carrot, sweet potato, beetroot, and red onion with olive oil, salt, and pepper in a bowl.
- Spread the root vegetables on a separate baking sheet and roast in the oven for 20 minutes, or until tender and slightly caramelized.
- Once the crust is done, remove it from the oven and top with the roasted root veggies, returning it to the oven for another 5 minutes.
- Garnish with fresh cilantro before serving.
