Ingredients

  • Cauliflower - 300 grams
  • Almond flour - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Carrot - 1 medium, diced
  • Sweet potato - 150 grams, diced
  • Red onion - 1 small, sliced
  • Spinach - 50 grams, chopped
  • Cilantro - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam until tender, about 5-7 minutes.
  3. In a large bowl, combine the steamed cauliflower, almond flour, olive oil, minced garlic, turmeric, cumin, coriander, salt, and black pepper. Mix until a dough forms.
  4. Line a baking sheet with parchment paper and spread the cauliflower dough into a round pizza shape, about 1/2 inch thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  6. While the crust is baking, toss the diced carrot, sweet potato, and sliced red onion with olive oil, salt, and black pepper. Spread them on another baking sheet.
  7. Roast the vegetables in the oven for 20-25 minutes until they are tender and slightly caramelized.
  8. Remove the pizza crust from the oven and layer the roasted vegetables and chopped spinach on top.
