- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Fresh ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the rabbit pieces with coconut oil, cumin seeds, coriander powder, turmeric powder, garam masala, ginger, garlic, green chili, salt, and black pepper. Mix well to coat the rabbit evenly.
- Cover the bowl and marinate the rabbit in the refrigerator for at least 30 minutes.
- Once marinated, arrange the rabbit pieces on a baking tray lined with parchment paper.
- Roast in the preheated oven for 45-50 minutes, turning the rabbit pieces halfway through for even cooking, until the rabbit is cooked through and golden brown.
- Remove from the oven, drizzle with lemon juice, and garnish with chopped cilantro before serving.
